Banana with cream cheese tart!
I will tell you that the combo banana-cream cheese is absolutely delicious! Have you ever tried it before? It’s actually like a banana cheesecake!

This healthy recipe is a great choice when you have a gathering with your family or fiends! I made it with a bigger mold so keep in mind the quantity of the ingredients if you use a smaller mold.

The crust is gluten free made from scratch with almond flour and coconut sugar but feel free to use cookies if you want, I do sometimes because let’s be realistic, who doesn’t like a cookie crust right?

DIABETIC DIET TIP

These healthy banana cheesecake tart is a great option for a healthy snack or a healthy dessert for diabetics and non diabetics also!

Since the base is made with almond flour and coconut sugar; and the filling is made with bananas and cream cheese (make sure to always use full fat dairy)… it won’t spike your blood sugar levels as long as they’re stable! Even though you have a higher sugar content from the bananas, it’s not much overall. And the healthy fats from this healthy recipe will help lower digestion and have a great blood sugar response.

INGREDIENTS

Crust:

  • 2 cup or 195gr of almond flour

  • 1/2 cup or 70gr of coconut sugar

  • 1/2 cup or 75gr of coconut oil

  • 1 teaspoon of pink Himalayan salt
    *Can also substitute for a Graham cracker base but wouldn’t be gluten-free.

Filling:

  • 4 ripe bananas

  • 8oz/230g organic cream cheese

  • 1/4 cup or 60ml of fresh lemon juice

  • 1 tablespoon of vanilla extract

  • Optional: gelatin or agar agar for thickness, I didn’t use any and kept it in the freezer.


STEPS

  1. In a bowl, combine the almond flour, coconut sugar and salt. Stir in the melted coconut oil and mix until fully combined.

  2. Transfer dough to a 9-inch/22cm tart pan with a removable bottom. Using a measuring cup or your fingers, evenly press dough in bottom and up sides of pan. Refrigerate.

  3. Blend the bananas and add the cream cheese little by little until fully combined.

  4. Pour the banana filling over the crust evenly and refrigerate for at least 1h.


* Store in the fridge if you used gelatine or in the freezer.

Tarta de plátano y queso crema. Es como un cheesecake en realidad!

Habéis probado la combinación de banana y queso crema alguna vez? A mí me parece deliciosa!

Esta tarta es muy fácil de hacer y no necesitaréis horno. Podéis hacer la base con galletas o crearla vosotros con la receta de abajo.

INGREDIENTES

Base:

  • 2 tazas o 195gr de harina de almendra

  • 1/2 taza o 70gr de azúcar de coco

  • 1/2 taza o 75gr de aceite de coco o mantequilla de vacas de pasto

  • 1 cucharadita de sal rosa del Himalaya
    *Se puede substituir con galletas Maria o Digestive pero entonces la base ya no sería sin gluten.

Relleno:

  • 4 plátanos maduros

  • 1/4 taza o 60ml de zumo de limón exprimido

  • 1 cucharada de extracto de vainilla

  • 230g de queso crema

  • Opcional: gelatina o agar agar para dar firmeza. Yo no he usado porque la he conservado en el congelador.

PASOS

  1. Mezclar todos los ingredientes de la base y apretar uniformemente en la base del molde. Reservar en nevera.

  2. Triturar los plátanos y añadir el queso crema poco a poco hasta que quede todo bien integrado.

  3. Verter la mezcla encima de la base y dejar en la nevera almenos 1 hora.

    Opcional: puedes añadir gelatina de calidad sin sabor o agar agar al relleno para darle más firmeza, yo no he usado porque lo he conservado en el congelador y lo he sacado 15 minutos antes de servir.

* Conservar en la nevera si usáis gelatina o en el congelador.
