Duration - 1 week or 3 months in the freezer
The macronutrients of these delicious and healthy carob brownies are below. If you have 8 brownies, each one will have:
235kcal
6.8gr protein
14.8gr net carbs
5.8gr fiber
7.1gr sugar
16gr fat
* I measured these values counting a mix of 30gr of coconut sugar and 30gr of erythritol and sugar-free chocolate chips.
INGREDIENTS
50gr oat flour or brown rice flour
50gr carob powder/flour
80gr almond flour
1/2 teaspoon baking powder
1/4 teaspoon pink Himalayan salt
2 eggs
2 tablespoons milk of choice
30gr coconut sugar
30gr date paste or erythritol (I like to combine different types of sweetener for better flavor)
60gr coconut oil (melted)
40gr dark chocolate chips (+80% cacao or sugar-free)
30gr chopped walnuts
STEPS
Pre heat oven to 350F/175C. Grease a mini rectangle mold rack or molds of choice with coconut oil.
In a bowl, mix the dry ingredients (almond flour, oat flour, carob powder, baking powder and salt).
In another bowl, whisk the eggs with the milk, coconut oil and coconut sugar.
Add the dry ingredients and mix until fully incorporated.
Add the chocolate chips and chopped walnuts and mix.
Pour the batter into the molds and bake for 15 minutes. If you use a big rectangular mold instead of small ones, bake for 25 minutes.
Leave them in a rack to cool and serve!
You can cover the brownies with any topping. I used a blend of blueberries with yogurt.
* Store in an air tight container at room temperature or freeze.
