HEALTHY PROTEIN CHERRY CRUMBLE "BARS"



This was the first time I tried a crumble with almond flour and protein powder and the flavor and consistency was awesome!!

These healthy cherry crumble bars are gluten-free, refined sugar free, low carb, VEGAN and high in protein! They are perfect!!!!!

So far I like the flavor touch and consistency protein powder gives on baking goods. Do you usually add it to your creations? In this case I used a vegan vanilla protein powder and it turned very good, you can also use whey protein of any kind. Just be always mindful about the type of protein powder you consume…it is difficult to find a protein that has good quality ingredients and no harm ones!

DIABETIC DIET TIP

These healthy cherry crumble protein bars can be a great snack right when you feel your sugar is about to drop or in cases when you’re craving something sweet on your meal post workout.

The reason I recommend this healthy snack on your meal post workout and not before, is because it requires a slow digestion due to the heathy fats, fiber and protein it contains. And take into account that fiber is especially important for people with diabetes, as it can help slow the digestion and absorption of carbs.

INGREDIENTS

Crust:

  • 1/2 cup or 75gr of unsalted grass-fed butter (at room temperature)

  • 1 cup or 75gr of almond flour

  • 1 cup or 130gr of vanilla protein powder

  • 1/4 cup or 20gr of coconut sugar

  • 1/4 teaspoon of pink Himalayan salt

Filling:

  • 3 cups pitted cherries (about 200gr)

  • 2 tablespoons of vanilla protein powder

  • 2 tablespoons of fresh lemon juice


STEPS

  1. Preheat oven to 375F/175C. Line with parchment paper a square mold of 8inches/20cm.

  2. Beat butter with coconut sugar in a bowl until light and fluffy. Add almond flour, protein powder and salt; beat until dough forms clumps but does not completely hold together.

  3. Press 3/4 of the previous dough mixture into bottom and 1 inch up sides of prepared pan.

  4. Stir together cherries, protein powder and lemon juice in a bowl. Spread over the crust.

  5. Crumble remaining dough mixture evenly over top, squeezing to create clumps.

  6. Bake until crust is golden, about 45 minutes. Let it cool 20 minutes.

  7. Remove from pan and let cool completely on a wire rack, about 1 hour. Cut into squares.


* Store in an air tight container at room temperature or fridge!

Os presento a un crumble proteico de cerezas que está delicioso!
Además no lleva gluten, ni azúcares refinados, y es bajo en carbohidratos y alto en proteína!!

Es una receta fácil y rápida de hacer. Espero que os guste!

INGREDIENTES

Base:

  • 1/2 taza o 75gr de mantequilla de vacas de pasto a temperatura ambiente

  • 1 taza o 75gr de harina de almendra

  • 1 taza o 130gr de proteína de vainilla

  • 1/4 taza o 20gr de azúcar de coco

  • 1/4 cucharadita de sal rosa del Himalaya

Relleno:

  • 3 tazas de cerezas, unos 200gr (sacarle el hueso)

  • 2 cucharadas de proteína de vainilla

  • 2 cucharadas de zumo de limón exprimido

PASOS

  1. Pre calentar el horno a 175C. Colocar papel para horno en un molde cuadrado de 20cm.

  2. Batir la mantequilla con el azúcar de coco y añadir la harina de almendra, proteína de vainilla y sal. Batir hasta que se formen trocitos, con una batidora de mano. También podéis hacerlo con las manos!

  3. Formar la base con 3/4 de la masa apretando con los dedos en la base y costados del molde.

  4. Mezclar las cerezas troceadas con zumo de limón y polvo de proteína y esparcir uniformemente sobre la base.

  5. Añadir el resto de masa a trocitos por encima y hornear unos 45 minutos.

  6. Dejar enfriar por completo antes de servir.

* Conservar en un recipiente hermético a temperatura ambiente o en la nevera.
