MATCHA GREEN TEA COOKIES with White Choco Chips


I love the combination of Matcha green tea and white chocolate chips!! I guess because the white chocolate is so sweet that together with the sourness of the Matcha green tea makes it just perfect!

These healthy cookies are made with only a few ingredients. They are low carb and gluten free thanks to the almond flour, refined sugar free thanks to the coconut sugar, high in protein thanks to the vanilla protein powder and can be dairy free as well if you use coconut oil instead of grass-fed butter which would make them vegan!

After making these healthy cookies the first time, I realized I could have used more Matcha green tea powder, simply because you can barely taste it on the cookies. This is why I added another teaspoon of Matcha powder.

We know many people tend to be skeptical towards Matcha green tea. If you’re one of those people, then you can follow along with this recipe using the exact quantities. However, if you want to notice a stronger Matcha green tea flavour, then I would use 2-3 teaspoons. Now, be careful not to add too much of it since it is a very strong green tea!

DIABETIC DIET TIP

Each one of these healthy cookies has 8gr of sugar each. If you want to omit the white chocolate chips you can substitute with any nut of your choice, then each healthy cookie will have only 5gr of sugar. Now you may wonder… is this too much sugar for just one cookie? Well… let me explain!

These 5gr of sugar are not refined, and by using almond flour instead of a refined flour such as wheat, it won’t make the same spike effect on your blood sugar as a regular refined cookie would! This is so important to understand as a diabetic!!!

In terms of food for diabetics, it is so critical to understand that when you mix non-refined sugar such as coconut sugar along with a healthy fat like almond flour, eggs, oils or butter, the digestion will be slower.

Fat and protein don’t cause blood sugar to rise the same way carbs do, that’s why it’s so important to add healthy fats and protein in every dessert you eat. And that is basically what I base most of my healthy recipes on!

* Remember always to eat every sweet in moderation.

INGREDIENTS

  • 3/4 cup or 75gr almond flour

  • 1 scoop or 30gr vanilla protein

  • 1/3 cup or 55gr of grass-fed butter or coconut oil (room temperature)

  • 2 teaspoons of matcha green tea powder

  • 1/4 cup or 35gr of coconut sugar or erythritol or date paste

  • 2 tablespoon nuts of choice or white chocolate chips (optional)

STEPS

  1. Preheat oven at 350F/175C.

  2. Beat the butter or the oil with a hand mixer and add in the coconut sugar.

  3. Sift almond flour and add it to the mixture.

  4. Add protein powder and matcha powder and mix until everything is fully combined.

  5. Optional: add any nut or chocolate chips you want, I used white chocolate chips.

  6. Make 6 round cookies and place them on a baking sheet with parchment paper.

  7. Bake for 10-12 minutes until the bottom edges start to turn golden brown.

  8. Be sure to let the cookies cool on the baking sheet after removing them from the oven for at least 15-20 minutes.

    * Store them in an air-tight container for up to 1 week.

Si os gusta el té verde Matcha, estas galletas son una opción deliciosa y saludable con un toque a ese sabor tan particular del té verde.

Yo soy bastante fan del té verde, especialmente si se combina en postres con un poco de chocolate blanco (lo sé, esa parte no es saludable… pero la clave es la moderación y el equilibrio verdad?) así que en mi caso he añadido pepitas de chocolate blanco, pero podéis substituir por chocolate negro o por algún fruto seco como almendras, pistachos o nueces que le quedarán genial también!

INGREDIENTES

  • 3/4 taza o 75gr de harina de almendra

  • 1 scoop o 30gr de proteína de vainilla

  • 1/3 taza o 55gr de aceite de coco o mantequilla de vacas de pasto (a temperatura ambiente)

  • 2 cucharaditas de polvo de té verde Matcha

  • 1/4 taza o 35gr de azúcar de coco o eritritol o pasta de dátiles

  • 2 cucharadas de frutos secos a escoger o pepitas de chocolate


PASOS

  1. Pre calentar el horno a 175C.

  2. Batir la mantequilla o aceite a temperatura ambiente con una batidora de mano (la que tritura no) y añadir el azúcar de coco.

  3. Tamizar la harina de almendra y añadirla a la mezcla.

  4. Añadir la proteína de vainilla y el té verde Matcha.

  5. Opcional: añadir frutos secos o pepitas de chocolate, yo he usado de chocolate blanco.

  6. Hacer unas 6 galletas grandes y ponerlas en una bandeja con papel de horno.

  7. Hornear 10-12 minutos o hasta que los bordes de las galletas se doren.

  8. Sobretodo después de hornear dejar enfriar las galletas en la bandeja o rejilla unos 15-20 minutos antes de tocarlas! Lo sé, es difícil!!

* Conservarlas en un recipiente durante una semana.
