HEALTHY GINGERBREAD COOKIES


Whenever I think of Christmas cookies, gingerbread cookies come to mind first!!

If you are planning to bake up a batch of healthy gingerbread cookies over the holidays, I have the perfect recipe for you!

A batch of gingerbread baking in the oven is guaranteed to make your home smell amazing!!

These healthy gingerbread cookies are soft in the centers, crisp on the edges, and perfectly spiced. I played around with the spices a lot and really loved the flavor of these cookies when using a full Tablespoon each of ground ginger and ground cinnamon. Make sure you chill the cookie dough for a minimum of 1 hour.

DIABETIC DIET TIP

One of the good things about these healthy gingerbread cookies recipe is that you can have it when your blood sugar levels are about to drop, before and to avoid having a hypoglycemia.

The reason is, these healthy snack contains a bit more of a carbohydrate content (just a little bit more) than my usual healthy recipes and that is because of the brown rice flour, syrup/honey and coconut sugar.

However, that doesn’t mean a diabetic cannot enjoy a food that contains a little bit more of a carbohydrate content when needed, specially for Christmas!! I always like to remind to all diabetics who read this blog that we can all enjoy the same type of foods as a non-diabetic person, just with more moderation and in specific situations.

INGREDIENTS

  • 2 cups or 200gr of rice flour or spelt flour or oat flour

  • 1 cup or 90gr of almond flour

  • 1/4 teaspoon of pink Himalayan salt

  • 1 and 1/2 tablespoons of ground cinnamon

  • 1 tablespoon of ground ginger

  • 1/2 teaspoon of baking soda

  • 1 tablespoon of vanilla extract

  • 3 tablespoons of yacon syrup or honey

  • 1 whole egg

  • 60gr of grass-fed butter or coconut oil

  • 80gr coconut sugar

  • 50gr erythritol

    Frosting:

  • Dark chocolate or

  • 50gr of cream cheese with 1 tablespoon of erythritol and 1 tablespoon of fresh lemon juice


STEPS

  1. Combine coconut sugar, butter, egg, syrup or honey and vanilla extract in a bowl. Beat or mix until creamy.

  2. In another bowl, mix the rest of the ingredients and add them to the previous mix. Mix well until fully incorporated.

  3. Divide dough in half and wrap it with oven paper. Refrigerate 1-2 hours or until firm.

  4. Heat oven to 375F/190C.

  5. Roll out dough on lightly floured surface to 1/8-inch/5mm thickness. Cut with a cookie cutter (I used the classic ginger bread cookie shape). Place cookies, 1 inch/2-3cm apart, on an oven tray. Bake 6-9 minutes or until set. Let stand 1 minute on trays; remove to cooling rack. Cool completely.

  6. Combine cream cheese with erythritol and 1 tablespoon of fresh lemon juice and place it in a decorating baking bag. Decorate cooled cookies with frosting as desired.

    * Store in the fridge for 1 week, I would just frost the cookies you are going to eat the same day, the rest would be better to store them without the frosting so the cream cheese doesn’t dry :)

Galletas de jengibre típicas de Navidad en versión saludable! Estás galletas navideñas están hechas con harina de arroz, harina de almendra, azúcar de coco y mantequilla de buena calidad.

Siempre es divertido hacer galletas navideñas y más si son tan ricas y aún mejor si son saludables!

Estas galletas saludables no llevan gluten ni lácteos* ni azúcares refinados, así que son ideales para todos aquellos que quieren comer dulces y seguir nutriéndose en estas Fiestas!

*Para tener una galleta completamente sin lácteos, no hagáis el glaseado con queso crema y hacerlo con nata de coco.


INGREDIENTES

  • 2 tazas o 200gr de harina de arroz integral o harina de espelta o harina de avena

  • 1 taza o 90gr de harina de almendra

  • 1/4 cucharadita de sal rosa del Himalaya

  • 1 y 1/2 cucharadas de canela en polvo

  • 1 cucharadas de jengibre en polvo

  • 1/2 cucharadita de bicarbonato de sodio

  • 1 cucharada de extracto de vainilla

  • 3 cucharadas de sirope de yacón o miel

  • 1 huevo entero ecológico

  • 60gr de mantequilla de vacas de pasto o aceite de coco

  • 80gr de azúcar de coco

  • 50gr eritritol

    Glaseado:

  • Chocolate negro o;

  • 50gr de queso crema con 1 cucharada de eritritol y 1 cucharada de zumo de limón exprimido


PASOS

  1. Combinar el azúcar de coco, mantequilla, huevo, syrope/miel y extracto de vainilla en un bol. Batir o mezclar hasta que se mezcle bien.

  2. En otro bol, mezclar el resto de ingredientes y añadirlos a la mezcla anterior. Mezclar bien hasta que quede bien incorporado y se cree una masa.

  3. Dividir la masa en dos partes y cubrirla con papel de horno. Dejarla en la nevera 1-2 horas o hasta que endurezca.

  4. Calentar el horno a 190C.

  5. Esparcir la masa y aplanarla con un rodillo, que quede de unos 5mm de grosor mas o menos. Cortar con un molde de galleta, yo he usado el classic del muñeco de galleta navideña. Colocar las galletas unos 2-3 cm separadas en una bandeja para horno. (A mi me han salido 3 bandejas con 8 galletas, es decir 24 galletas). Hornear 6-9 minutos o hasta que los bordes de las galletas estén dorados. Dejarlas enfriar en la bandeja y luego dejarlas enfriar por completo en una rejilla.

  6. Combinar el queso crema con el eritritol y el zumo de limón y meter la mezcla en una manga pastelera. Decorar las galletas a vuestro gusto!

* Conservar en la nevera 1 semana, yo recomiendo colocar el glaseado solo en las galletas que sepáis que vais a comer ese mismo día, sino el glaseado se puede secar demasiado.
