This healthy mug cake is ideal for diabetics, its sugar-free and has only 10gr of net carbs!

This healthy lemon mug cake is quite big and I would be full by eating it entirely as a snack or eat half as dessert after a meal.

The macronutrient content is the following:

Remember to check your sugar levels before and after every meal and make sure your glucose is stable before starting to eat.

If your sugar levels are going down a little and you feel you need a little bit more of carb content, substitute the almond flour for rice flour or oat flour and you’ll get 24-28gr net carbs.
You can also use coconut sugar instead of erythritol and the sugar content will increase to 22gr total.

INGREDIENTS

  • 1 egg

  • 1 tablespoon coconut oil/olive oil/grass-fed butter (melted)

  • 1 & 1/2 tablespoon coconut sugar or erythritol for a sugar-free version

  • 1 tablespoon almond milk

  • 1 tablespoon fresh lemon juice

  • 1/4 teaspoon vanilla extract

  • 5 tablespoons almond flour

  • 1/2 teaspoon baking powder

  • pinch of Himalayan pink salt

  • optional: 1 teaspoon lemon zest

  • optional: 1 tablespoon poppy seeds

Topping

  • 2 tablespoons vanilla yogurt or vegan yogurt

  • 1 teaspoon lemon juice

  • 1 teaspoon erythritol or stevia if your yogurt is unsweetened

  • optional: 1 teaspoon poppy seeds, if you don’t use them in the mug cake

STEPS

  1. In a mug, mix together the wet ingredients (egg, melted coconut oil, erythritol/coconut sugar, almond milk, lemon juice and vanilla extract).

  2. Once fully combined, add the almond flour, pinch of salt and baking powder. Mix until fully incorporated. You can add here lemon zest and poppy seeds if you want to and mix again.

  3. Microwave 90-110 seconds and let it cool for 1 minute.

  4. For the topping mix all the ingredients together, pour on top of the mug cake and enjoy!

INGREDIENTES

  • 1 huevo

  • 1 cucharada de aceite de coco/aceite de oliva/mantequilla de vacas de pasto

  • 1 & 1/2 cucharada de azΓΊcar de coco o eritritol para una versiΓ³n sin azΓΊcar

  • 1 cucharada de leche de almendras

  • 1 cucharada zumo de limΓ³n exprimido natural

  • 1/4 cucharadita de extracto de vainilla

  • 5 cucharadas de harina de almendra

  • 1/2 cucharadita de levadura en polvo

  • pizca de sal rosa del Himalaya

  • opcional: 1 cucharadita de pile rallada de limΓ³n

  • opcional: 1 cucharada semillas de amapola

Topping

  • 2 cucharadas de yogur de vanilla/natural o yogur vegetal

  • 1 cucharadita de zumo de limΓ³n exprimido

  • 1 cucharadita de eritritol o estevia si el yogur no estΓ‘ endulzado

  • opcional: 1 cucharadita de semillas de amapola, si no has usado en el relleno del mug cake


PASOS

  1. En una taza, mezclar los ingredientes lΓ­quidos juntos ( huevo, aceite de coco derretido, eritritol, leche de almendra, zumo de limΓ³n y extracto de vainilla)

  2. Una vez mezclado, aΓ±adir la harina de almendra, pizca de sal y levadura. Mezclar hasta que quede bien integrado. Puedes aΓ±adir si quieres la piel rallada de limΓ³n y las semillas de amapola y mezclar de nuevo.

  3. Poner en el microondas 90-110 segundos y dejar que enfrΓ­e 1 minuto.

  4. Para el topping, mezclar todos los ingredientes juntos, verter sobre el mug cake y a disfrutarlo!
