Peanut Butter lovers around here? I am indeed! This is why this blog needs to have a Classic Peanut Butter Cookie Recipe!

So these 3-Ingredient healthy Peanut Butter Cookies are gluten free, dairy free and refined sugar free and so yummy! It will take you 5 minutes to prepare them and 12 minutes to bake them, so in less than 30 minutes you have it!

DIABETIC DIET TIP

These healthy peanut butter cookies are a great option as a snack any time!

As you can see below, the macronutrients are pretty good. If you want to add protein content, feel free to add protein powder like I did in these almond butter cookies.

Since the fat content is the main macronutrient in these healthy cookies, the sugar content won’t cause you blood sugar spikes, unless you eat them all…but you won’t do that because you will enjoy a couple of these at a time!

If I were you, I would try to make these cookies both ways (with and without protein) and see which one you prefer! We would love to know your feedback!

If you make 12 cookies, the macronutrients in each healthy cookie will be:

4.7gr protein
2.1gr
net carbs
1.6gr fiber
0.5gr
sugars
8.8gr
fats

* Take into account I have calculated these numbers based on using erythritol as a sweetener, if you use coconut sugar the numbers change a bit, like these:

7.7gr
net carbs
1.6gr fiber

8.8gr
fats


INGREDIENTS

  • 1 cup or 200gr peanut butter (or nut butter of choice)

  • 1/2 cup or 70gr of coconut sugar or erythritol or granulated sweetener of choice

  • 1 whole egg

  • Optional: 1/2 tablespoon of vanilla extract

  • Optional: If you want to make these healthy cookies with extra protein content, you can add protein powder like in this recipe for almond butter cookies. I did not add protein for the peanut butter cookies.


STEPS

  1. Pre heat oven to 350F/175C.

  2. In a bowl, whisk the egg and mix together with the peanut butter and the vanilla extract.

  3. Add the coconut sugar and mix until fully combined.

  4. Roll the dough into 1.5inches/3cm balls, and place on a cookie sheet with parchment paper. Using the base of your palms or a fork, slightly flatten the balls to about 1/2 inch/1cm thick. Makes about 12 cookies.

  5. Bake for 10-12 minutes or until the edges begin to brown.

  6. Remove the cookies from the oven and let them cool at least 10 minutes.

* Store in an air tight container at room temperature or fridge for 1 week.

Galletas de cacahuete super tiernas y deliciosas! Son muy fáciles de hacer, tan sólo necesitáis 3 ingredientes por lo que el sabor a cacahuete es muy intenso!

Éstas deliciosas galletas de cacahuete no llevan gluten, ni lácteos, ni azúcares refinados!

Si haces 12 galletas, cada una tendrá los siguientes valores nutricionales:

* Ten en cuenta que he calculado estos valores basándome en haber usado eritritol como endulzante, si utilizas azúcar de coco los valores cambiarán a estos:

carbs netos
1.6gr fibra
6gr
azúcar
8.8gr
grasa


INGREDIENTES

  • 1 taza o 200gr de mantequilla/crema de cacahuete

  • 1/2 taza o 70gr de azúcar de coco o eritritol o endulzante granulado preferido

  • 1 huevo

  • Opcional: 1/2 cucharada de extracto de vainilla

  • Opcional: Si queréis añadir contenido proteico a estas galletas saludables, podéis añadir polvos de proteína como he hecho en esta receta de galletas de almendra. Yo esta vez no he añadido proteína para esta receta de galletas de crema de cacahuete.


PASOS

  1. Pre calentar el horno a 175C.

  2. En un bol, batir el huevo y mezclar con la mantequilla/crema de cacahuete.

  3. Añadir el azúcar de coco y mezclar hasta que quede todo bien integrado.

  4. Hacer bolitas de 3cm aproximadamente y colocar en una bandeja con papel de horno. Con la base de la palma de la mano o con un tenedor, apretar suavemente para aplanar las galletas, deberían tener un grosor de 1 cm mas o menos. A mí me han salido 12 galletas.

  5. Hornear 10-12 minutos o hasta que los bordes de las galletas estén dorados.

  6. Retirar las galletas del horno y dejar enfriar al menos 10 minutos.

* Conservar en un recipiente hermético a temperatura ambiente o en nevera durante 1 semana.
