I LOVE PISTACHIO ICE CREAM! My favorite!! What’s your favorite ice cream??

I actually was thinking why took me so long to try to make this recipe since I love pistachio ice cream flavor so much! What I like the most is that only required 3 ingredients, always trying to make recipes that are as nutritious as possible for you!

This healthy pistachio recipe is gluten free, sugar free and low carb.

DIABETIC DIET TIP

Who said diabetics cannot eat ice cream? Well you can! But you will need to make it yourself :)

This recipe is so easy and so yummy if you love pistachios! I didn’t add any sugar and it’s only made with real pistachios and heavy cream, so it’s a low carb ice cream and it won’t spike your sugar levels, as long as they’re stable!

If you divide the whole ice cream in 10 scoops, each scoop has:

1.8gr
net carbs
1.1gr fiber
0.7gr
sugar
16.9gr
fats

Ready in - 1 hour
Yield - 10 scoops of ice cream
Duration - 6 months in the freezer

INGREDIENTS

  • 100gr raw pistachios + some chopped pistachios to add chunks to the filling

  • 300ml heavy or whipping cream

  • 1/4 cup erythritol or coconut sugar or date paste (I used erythritol to make it sugar free)

STEPS

  1. In a food processor or blender, blend the raw pistachios until it becomes like a dough.

  2. Add the heavy cream and blend until fully combined.

  3. Add the desired sweetener and mix until fully incorporated.

  4. Add the chopped pistachios and pour the ice cream into the desired shape mold, I use a square glass container.

  5. Chill in the fridge for 1 hour and place in the freezer for another hour.

* Store in the freezer for 5 months.

No sé como no había probado de hacer helado de pistacho antes, si es mi favorito! La verdad que he quedado súper contenta con el resultado! La textura es perfecta, y el sabor ni te cuento!

Este helado saludable de pistacho está hecho con tan solo 3 ingredientes, no lleva gluten ni azúcares refinados o añadidos y es bajo en carbohidratos!

Estos son los macronutrientes del helado:

150kcal
2.2gr
proteína
1.8gr
carbs netos
1.1gr fibra
0.7gr
azúcar
16.9gr
grasas

Porción - 10 bolitas de helado
Conservación - 5 meses en el congelador

INGREDIENTES

  • 100gr pistachos crudos + pistachos troceados para añadir al helado

  • 300ml de nata para montar

  • 1/4 taza eritritol o azúcar de coco o pasta de dátiles (yo he usado eritritol para que no contenga azúcar)

PASOS

  1. En una procesadora de alimentos o trituradora/batidora, triturar los pistachos hasta que se forme como una masa.

  2. Añadir la nata y triturar hasta que quede bien combinado.

  3. Añadir la opción que queráis de endulzante y triturar hasta que quede todo bien integrado.

  4. Añadir los pistachos troceados y verter el helado en el molde deseado. Yo he usado un recipiente de cristal cuadrado.

  5. Dejar reposar en la nevera 1 hora y luego otra hora en el congelador.

* Conservar en el congelador durante 5 meses.
