HEALTHY VALENTINE’S CHOCOLATE COOKIES

Having Valentine’s Day next week means preparing something sweet and special in advance to surprise your loved ones!

These healthy chocolate cookies are gluten free, refined sugar free, dairy free and VEGAN!

I usually use egg in a cookie recipe but I wanted to avoid it this time so the recipe could be vegan as well.

These healthy recipes are crunchy on the edges and soft and chewy on the inside!!

DIABETIC DIET TIP

The macronutrient content on this healthy cookies is awesome! But since I didn’t add any protein content, I would recommend to eat them with a protein shake or a yogurt that has protein content. Because remember protein is always essential on every meal!

So the nutritional facts for 1 big cookie are as follows (it varies a little depending on the shape of the cookie and if you use sugar-free chocolate chips or not and coconut sugar or erythritol)

I made the below calculations without the chocolate chips and using oat flour (see recipe details):

Remember to always have stable blood glucose levels, about 80-120 mg/dL every time you are about to eat.

Prep - 5 min + 10 min to chill the dough in the fridge = 15min
Bake - 2 batches (around 20 minutes)
Ready in - 10 minutes (let them cool a little bit after baking or they will break easily)
Yield - 10 big cookies
Duration - 1 week


INGREDIENTS

  • 1/4 cup or 30gr of coconut flour or oat flour or brown rice flour

  • 1/4 cup or 20gr of unsweetened cacao powder

  • 1/2 teaspoon of baking powder

  • 1/2 teaspoon of baking soda

  • 1/4 teaspoon of pink Himalayan salt

  • 1/3 cup or 35gr grass-fed butter or coconut oil

  • 35gr coconut sugar

  • 35gr erythritol

  • 1/4 cup or 60ml of milk of choice

  • 1 teaspoon of vanilla extract

  • Optional: 60gr of dark chocolate chips (I used sugar-free)


STEPS

  1. Pre heat oven at 375F/190C.

  2. In a bowl, mix the dry ingredients together (almond flour, coconut flour, cacao powder, baking powder, baking soda and salt).

  3. In another bowl, mix melted butter or oil with coconut sugar, erythritol, milk and vanilla extract.

  4. Mix everything together and add the chocolate chips at the end.

  5. Shape a big ball and chill in the fridge for 10 minutes.

  6. Once cooled, roll the dough on a parchment paper and use a heart shaped cookie cutter or cutter of choice. I had dough for 10 big cookies.

  7. Bake 10-12 minutes if making big cookies. Let them cool on a rack.

* Store in an air tight container at room temperature for 1 week

San Valentín es el domingo que viene, y que regalo más romántico hay que regalar unas deliciosas y saludables galletas de chocolate en forma de corazón?!

Os aseguro que estas galletas están deliciosas! Son muy fáciles de hacer y se hacen enseguida.

No llevan gluten, ni lácteos ni azúcares refinados.

Cada galleta tiene la siguiente información nutricional (dependerá del tamaño de la galleta y de los ingredientes, si has utilizado azúcar de coco o eritritol o pepitas de chocolate normales o sin azúcar.

Basado en usar la harina de avena y sin pepitas de chocolate, cada galleta grande tendrá la siguiente información nutricional:

Preparación - 5 minutos + 10 minutos de reposo para enfriar la masa = 15 min
Horno - 2 bandejas (unos 20 min en total)
Porción - 10 galletas grandes
Conservación - 1 semana


INGREDIENTES

  • 1 taza o 85gr de harina de almendra

  • 1/4 taza o 30gr de harina de coco o harina de avena o harina de arroz integral

  • 1/4 taza o 20gr de cacao puro en polvo

  • 1/2 cucharadita de levadura

  • 1/2 cucharadita de bicarbonato sódico

  • 1/4 cucharadita de sal rosa del Himalaya

  • 1/3 taza o 35gr de mantequilla de vacas de pasto o aceite de coco

  • 35gr de azúcar de coco

  • 35gr eritritol

  • 1/4 taza o 60ml de leche (el tipo que queráis)

  • 1 cucharadita de extracto de vainilla

  • Opcional: 60gr de pepitas de chocolate negro (he usado sin azúcar añadido)


PASOS

  1. Pre calentar el horno a 190C.

  2. En un bol, mezclar la harina de almendra, harina de coco, cacao, levadura, bicarbonato y sal.

  3. En otro bol, mezclar la mantequilla o aceite con azúcar de coco, eritritol, leche y extracto de vainilla.

  4. Mezclar todo junto y añadir las pepitas de chocolate negro al final.

  5. Hacer una bola grande con la masa y dejarla en la nevera 10 minutos para que se enfríe.

  6. Una vez la masa está enfriada, aplastar con un rodillo sobre papel de horno y cortar con el cortador de galletas que quieras. Yo he usado en forma de corazón (San Valentín!). Me han salido 10 galletas grandes.

  7. Hornear 10-12 minutos si haces galletas grandes. Dejar que se enfríen en una rejilla.

* Conservar en un recipiente hermético a temperatura ambiente durante 1 semana.
