BLUEBERRY CAKE DONUTS

Delicious and healthy version of the classic blueberry cake donuts!

These healthy donuts are gluten free, refined sugar free and dairy free! I have to say is the first time I make baked donuts and they’re pretty good! Although don’t expect them to be as sugary or texture-wise as the traditional ones. These healthy donuts are baked not fried, but they’re yummy anyway :)

Did I say donuts? And did I say healthy donuts? Yes!
In this case cake donuts because if you bake the donuts instead of fry them, the consistency is like a loaf or cake, an those type of donuts are called cake donuts.

The ingredients on these healthy donuts are healthier than the traditional one. Made with almond flour and coconut flour and as a sweetener I used erythritol to make the sugar content almost none, so they’re low carb as well! And this will help your sugar levels to stay stable.

The macronutrients of these healthy blueberry donuts are pretty good. If you make 6 donuts, each one will have:

* Take into account I have not included the frosting/topping in these macronutrients since it will be your choice. I also used eritritol as a sweetener to have almost no sugar content.


INGREDIENTS

  • 1 cup or 85gr almond flour

  • 1/4 cup or 30gr coconut flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon Himalayan pink salt

  • 1/2 cup or 70gr erythritol or coconut sugar

  • 1 egg

  • 3 egg-whites

  • 1/2 cup or 120ml milk of choice

  • 1 teaspoon vanilla extract

  • 2 tablespoons coconut oil

  • 1 cup fresh blueberries or quantity of choice

  • Topping: I recommend to mix some greek yogurt or coconut yogurt with some blended blueberries and sprinkle some sugar-free white chocolate!


STEPS

  1. Pre heat oven at 350F/175C. Grease with coconut oil a donut rack.

  2. In a bowl, mix the almond flour, coconut flour, baking powder, salt and erythritol. Set aside.

  3. In another bowl, whisk the egg and egg-whites, add the milk and vanilla extract. And add the coconut oil. Mix until fully combined.

  4. Pour the dry ingredient mix into the previous one and mix well until fully incorporated.

  5. Add the blueberries and pour the batter into 6 donut molds.

  6. Bake for 15 minutes and let them cool in the molds.

  7. Once cooled, remove from the molds and store them or cover with desired topping.

  8. As a topping, I blended 1 cup of blueberries with 4 tablespoons of greek yogurt and 1 tablespoon of erythritol and sprinkled some white chocolate.


* Store in an air tight container at room temperature or fridge (if you have cover with frosting)

Primera vez que hago donuts saludables y primera de muchas! Aunque no sean como los donuts fritos de toda la vida… yo creo que el hecho de que tengan forma de donut ya parece que estes comiendo donuts.. haha.

Estos donuts saludables no llevan gluten, ni lΓ‘cteos ni azΓΊcares refinados y son bajos en carbohidratos!

Los macronutrientes de estos donuts saludables de arΓ‘ndanos estΓ‘n super bien y si te salen 6, cada uno tendrΓ‘:

* Ten en cuenta que no he incluido los valores del glaseado/topping ya que variarΓ‘ segΓΊn lo que escojas. TambiΓ©n he calculado Γ©stos valores teniendo en cuenta que utilizas eritritol como endulzante.


INGREDIENTES

  • 1 taza o 85gr harina de almendra

  • 1/4 taza o 30gr harina de coco

  • 1 cucharadita levadura en polvo

  • 1/2 cucharadita de sal rosa del Himalaya

  • 1/2 taza o 70gr eritritol o azΓΊcar de coco

  • 1 huevo

  • 3 claras de huevo

  • 1/2 taza o 120ml leche o bebida vegetal

  • 1 cucharadita de extracto de vainilla

  • 2 cucharada de aceite de coco

  • 1 taza de arΓ‘ndanos frescos (sin congelar)

  • Topping: puedes escoger lo que prefieras, yo he mezclado un poco de yogur griego o yogur de coco con un puΓ±ado de arΓ‘ndanos triturados y por encima un poco de chocolate blanco sin azΓΊcar.

PASOS

  1. Pre calentar el horno a 175C. Engrasar una bandeja de donuts con aceite de coco.

  2. En un bol, mezclar la harina de almendra, harina de coco, levadura, sal y eritritol. Reservar.

  3. En otro bol, batir el huevo y las claras de huevo, aΓ±adir la leche y el extracto de vainilla. AΓ±adir el aceite de coco. Mezclar hasta que quede todo integrado.

  4. Verter los ingredientes secos en la mezcla anterior y mezclar hasta que quede bien incorporado.

  5. AΓ±adir los arΓ‘ndanos y verter el relleno en un molde de 6 donuts.

  6. Hornear durante 15 minutos y dejar enfriar en el molde.

  7. Una vez enfriados, desmoldar y dejar en un recipiente hermΓ©tico hasta consumo o aΓ±adir el topping deseado y consumir.

  8. Como topping, he triturado un puΓ±ado de arΓ‘ndanos con 4 cucharadas de yogur natural y 1 cucharada de eritritol y he aΓ±adido un poco de chocolate blanco derretido.

* Conservar en un recipiente hermΓ©tico a temperatura ambiente o en la nevera.
