HEALTHY BROWNIE β€œCOOKIE”

You will not believe how delicious this healthy version of a brownie and a cookie dough together I have created!! These healthy brownie-cookie is a melt-in-your-mouth dessert that you all should make and let me know if I’m right…!!!

These healthy dessert is so delicious…one of the most of my creations!!

The base is a chocolate rich brownie layer and the top is amazing cookie dough topping! Both layers are gluten free, refined sugar free and dairy free! The brownie layer is made with almond flour whilst the cookie dough is made with a mix of brown rice flour and oat flour.

So it’s a great mix! It has carbohydrate content as well as healthy fats and protein :)

Remember to always make sure your blood glucose levels are stable around 80-110gr/dL before eating anything! Specially sweets! The sugar content on these healthy brownie-cookie slices will depend on the amount of chocolate chips you add as well. Moderation is key! BROWNIE COOKIE

Duration - 1 week or freeze for 3 months


INGREDIENTS

Brownie

  • 75gr of almond flour

  • 1/2 teaspoon of pink Himalayan salt

  • 2 tablespoons of unsweetened cacao powder

  • 40gr of grass-fed butter or coconut oil

  • 85gr of dark chocolate (at least 85%)

  • 100gr of coconut sugar or you can mix 50gr erythritol and 60gr coconut sugar

  • 1 whole egg

  • 1/2 teaspoon of vanilla extract

  • Dark chocolate chips (I used sugar-free)

Cookie Dough

  • 75gr of grass-fed butter or coconut oil

  • 70gr of coconut sugar or you can mix 40gr coconut sugar with 30gr erythritol

  • 1 whole egg

  • 1/2 teaspoon vanilla extract

  • 1/4 teaspoon baking powder

  • 1/4 teaspoon pink Himalayan salt

  • 1 cup or 110gr of brown rice flour or you can mix 60gr oat flour with 50gr brown rice flour

  • Dark chocolate chips (I used sugar-free)


STEPS

  1. Pre heat oven at 350F/175C. Line with parchment paper an 8x8inch (20x20cm) square mold or a rectangle one.

    For the brownie:

    1. Melt butter and chocolate together. Whisk in coconut sugar, egg and vanilla extract. Mix everything until fully combined. Set aside.

    2. In another bowl mix the almond flour, salt and cacao and mix together with the previous mixture.

    3. Add chocolate chips to taste and pour into the mold with parchment paper. Reserve.

    For the cookie dough:

    1. Cream butter and coconut sugar and add the egg and vanilla extract. Set aside.

    2. In another bowl, mix brown rice flour (and oat flour if you mix), baking powder and salt.

    3. Mix everything together and add chocolate chips.

    4. Pour the cookie dough batter on top of the brownie batter from first steps.

  2. Bake for 25-30 minutes and let it cool completely in the mold.
    * Store in an air tight container at room temperature for 1 week.

Ya visteis el otro dΓ­a por Instagram stories esta delicia…y hoy os comparto la receta! Este brownie-cookie / brownie-galleta no lleva gluten ni lΓ‘cteos ni azΓΊcares refinados! Es de los postres/snacks saludables mΓ‘s deliciosos que he hecho!!

La base estΓ‘ hecha con harina de almendra, chocolate y cacao puro. La capa de galleta estΓ‘ hecha con harina de arroz integral y chips de chocolate. Ni notarΓ©is que lleva ingredientes saludables de lo rico que estΓ‘!! AdemΓ‘s es fΓ‘cil de hacer :)

INGREDIENTES

Brownie

  • 75gr de harina de almendra

  • 1/2 cucharadita de sal rosa del Himalaya

  • 2 cucharadas de cacao en polvo

  • 40gr de mantequilla de vacas de pasto o aceite de coco

  • 85gr de chocolate negro (al menos 85%)

  • 100gr de azΓΊcar de coco o 50gr + 50gr de eritritol

  • 1 huevo entero

  • 1/2 cucharadita de extracto de vainilla

  • Pepitas de chocolate negro al gusto (yo he usado sin azΓΊcar aΓ±adido)

Cookie Dough

  • 75gr de mantequilla de vacas de pasto o aceite de coco

  • 70gr de azΓΊcar de coco o 40gr con 30 gr de eritritol

  • 1 huevo entero

  • 1/2 cucharadita de extracto de vainilla

  • 1/4 cucharadita de levadura en polvo

  • 1/4 cucharadita de sal rosa del Himalaya

  • 110gr de harina de arroz integral o 60gr + 50gr de harina de avena

  • Pepitas de chocolate negro al gusto (yo he usado sin azΓΊcar aΓ±adido)


PASOS

  1. Pre calentar el horno a 175C. Colocar papel de horno en un molde cuadrado de 20x20cm o uno rectangular.

    Para el brownie brownie:

    1. Derretir la mantequilla y el chocolate juntos. AΓ±adir el azΓΊcar de coco, huevo y vainilla. Mezclar todo junto hasta que quede bien integrado.

    2. En otro bol, mezclar la harina de almendra, sal y cacao y mezclar todo junto con la mezcla anterior.

    3. AΓ±adir las chips de chocolate y verter la masa en el molde. Reservar.

    Para el cookie dough:

    1. Batir la mantequilla con el azΓΊcar de coco y aΓ±adir el huevo y el extracto de vainilla. Reservar.

    2. En otro bol, mezclar la harina de arroz (y de avena si haces un mix), levadura, y sal.

    3. Mezclar todo junto y aΓ±adir pepitas de chocolate.

    4. Verter la masa por encima del brownie.

  2. Hornear unos 25-30 minutos y dejar que se enfrΓ­e por completo en el molde.



* Conservar en un recipiente hermΓ©tico a temperatura ambiente durante 1 semana.
