PISTACHIO MINI BUNDT CAKES

These delicious and healthy pistachio mini bundt cakes are so yummy!! They’re easy to make and gluten free, refined sugar free and can be dairy free!

DIABETIC DIET TIP

These healthy bundt cakes are made with rice flour and pistachio flour. There’s only 50gr of added coconut sugar. There’s dark chocolate chips, eggs and grass-fed butter or coconut oil.

As you can see, healthy ingredients like the usual here! So this healthy dessert is a great option to have in mind!

The macronutrients on these bundt cakes are pretty good! Being 50% of the nutrients healthy fats, 40% carbohydrates and 10% protein. I would eat these delicious bundt cakes with a protein shake or another protein source you choose if you want to have a higher protein content meal unless is for dessert!

INGREDIENTS

  • 1 cup or 95gr of pistachio flour (blended pistachios)

  • 1 cup or 115gr of brown rice flour or oat flour or einkorn flour

  • 2 teaspoons baking powder

  • 2 eggs (at room temperature)

  • 1/4 cup or 40gr grass-fed butter or coconut oil

  • 1/4 cup of honey or yacon syrup

  • 1/2 cup or 120ml of cream or coconut cream or milk of choice

  • 1/3 cup or 50gr of coconut sugar

  • 1 /2 cup dark chocolate chips


STEPS

  1. Pre heat oven at 350F/175C.

  2. In a bowl, mix the dry ingredients together and set aside.

  3. In another bowl, beat the eggs with melted butter/oil, honey/syrup, cream and coconut sugar.

  4. Add the dry ingredient mix into the previous mix until fully combined.

  5. Add the chocolate chips and add the batter into the small bundt cake molds or mold of choice.

  6. Bake for 40 minutes and let the bundt cakes cool in their molds and once cooled, remove from the molds.

  7. You can add chopped pistachio on top or topping of choice, white chocolate would be great! I made a healthier one with cream and green tea matcha powder.


* Store in an air tight container at room temperature or fridge for 1 week.

Cual es vuestro fruto seco preferido? Me encanta cocinar con harina de almendra, pero he hecho varios postres ya con harina de pistacho y funciona igual de bien!! Así que es una súper alternativa!

Estos bundt cakes saludables no llevan gluten, ni lácteos ni azúcares refinados!!

Listo en - una vez enfriados los bundt cakes
Porción - 6 mini bundt cakes


INGREDIENTES

  • 1 taza o 95gr de harina de pistacho (pistachos triturados)

  • 1 taza or 115gr de harina de arroz integral o de avena o einkorn

  • 2 cucharaditas de levadura

  • 2 huevos (a temperatura ambiente)

  • 1/4 taza o 40gr de mantequilla de vacas de pasto o aceite de coco

  • 1/4 taza de miel o sirope de yacón

  • 1/2 taza o 120ml de nata normal o nata de coco o leche/bebida vegetal

  • 1/3 taza o 50gr de azúcar de coco

  • 1 /2 taza de pepitas de chocolate negro


PASOS

  1. Pre calentar el horno a 175C.

  2. En un bol, mezclar los ingredientes secos juntos y reservar.

  3. En otro bol, batir los huevos con la mantequilla/aceite, miel/sirope, nata/leche y azúcar de coco.

  4. Mezclar todo junto hasta que quede bien integrado.

  5. Añadir las pepitas de chocolate y verter el relleno en pequeños moldes de bundt cake o el molde que queráis.

  6. Hornear durante 40 minutos y dejar que se enfríen en los moldes. Una vez enfriados desmoldar.

  7. Podéis añadir pistachos troceados por encima o derretir chocolate. Chocolate blanco quedaría espectacular!! Pero para hacer una versión más sana, simplemente he mezclado nata con polvo de té verde Matcha y estevia.

* Conservar en un recipiente hermético a temperatura ambiente o nevera.
