HEALTHY MAGNUM ICE CREAM


Summer is around the corner and that means Ice Cream Recipes as well!!

I wanted to share with you this amazing chocolate ice cream recipe that will remind you of the classic magnums but in a healthier version!

Needless to say, these healthy ice creams are gluten free, refined sugar free, dairy free, high in protein and vegan! Ahá!

The main ingredient here is actually a nut that is not really considered a nut! You know it…cashews!

Cashews are an excellent source of micronutrients like vitamins and minerals including copper, manganese, magnesium and phosphorous, vitamin K, iron, and zinc.

Cashews are well known for their rich buttery flavor and texture and are increasingly popular in the making of dairy replacements!

As always, remember that nuts are high energy dense foods, so a little goes a long way!

DIABETIC DIET TIP

There’s never been a better ice cream solution for a diabetic than this amazing healthy ice cream recipe.

The best thing about it is that you can enjoy a delicious and nutrient dense chocolate ice cream that won’t spike your sugar levels!
The filling of the ice cream is made mainly with cashews, real cacao and ideal protein powder. So not only these provide healthy fats but also add a good amount of protein to each ice cream! You already love it right?

From our personal experience, we have been enjoying these every other day at night while watching a movie and they’re the perfect high protein snack with a chocolate rich flavour! Your sugar levels will stay on point as long as you have levels between 80 and 120 mg/dL prior to eating them (not on a hyperglycemia state).

Ready in - 30 minutes after covering with chocolate
Yield - 6 magnum ice creams
Duration - 3 months in the freezer


The macronutrients of these healthy magnum ice creams are great, if you make 6, each one will have:

* Take into account I have not included the chocolate covering since it will depend on what type of chocolate you use.

If you compare with the regular magnum classic look at the huge difference in macronutrients!!

Do you see why is much better to make your own snacks and desserts? Way healthier and more nutritious!


INGREDIENTS

  • 200gr soaked cashews (preferably overnight, if not at least 4 hours). It will be the equivalent to use 70-80gr raw cashews and soaked them becoming 200gr of soaked cashews

  • 2 tablespoons or 30ml melted coconut oil

  • 1 teaspoon or 5ml vanilla extract

  • 120ml almond milk

  • 20gr unsweetened cacao powder 100%

  • 50gr chocolate protein powder

  • 100gr dark chocolate (at least 80% cacao)


STEPS

  1. Blend soaked cashews with vanilla extract, coconut oil and almond milk in a food processor.

  2. Once completely blended and smooth, transfer to a bowl and add the cacao and protein powder and mix until fully incorporated.

  3. Pour into a silicone ice cream mold and freeze for at least 3 hours.

  4. Melt dark chocolate in a bowl.

  5. Remove the ice creams from the molds and cover them in chocolate.

  6. Store them in the freezer for at least 30 minutes and they will be ready!

    * Store them in the freezer and remember to take them out of the freezer at least 10 minutes before eating otherwise it will be very frozen and maybe too hard to eat immediately.

Ya huele a verano y con él recetas de helado!

Estos helados de chocolate están super ricos!! No llevan gluten ni azúcares refinados ni lácteos. Son completamente veganos y saludables!

Os aseguro que os recordarán a los Magnums clásicos de toda la vida!!

Los macronutrientes de éstos magnums saludables de chocolate son ideales. Si te salen 6 magnums, cada uno tendrá:

* Ten en cuenta que no he incluido la información nutritional de la cobertura de chocolate ya que va a depender de qué tipo de chocolate utilizes.

Si comparamos con el Magnum classic de toda la vida, increíble las diferencias!!

Un Magnum classic de la marca Magnum contiene:

proteína
26gr
carbs netos
2gr fibra
23gr
azúcares
17gr
grasas

Además, no te olvides que es un procesado y que contiene azúcares refinados y grasas hidrogenada, a comparación de la receta que te comparto aquí que son ingredientes de calidad y nutritivos.


INGREDIENTES

  • 200gr de anacardos remojados (preferiblemente durante la noche, sino unas 4 horas). Es lo mismo que usar 70-80gr de anacardos crudos y remojarlos después que se convierten en 200gr

  • 2 cucharadas o 30ml de aceite de coco derretido

  • 1 cucharadita o 5ml de extracto de vainilla

  • 120ml de bebida vegetal, yo he usado de almendra

  • 20gr de cacao en polvo 100%

  • 50gr de proteína de chocolate o de vainilla

  • 100gr de chocolate negro (al menos 80% cacao)


PASOS

  1. Triturar los anacardos ya previamente remojados con el extracto de vainilla, bebida vegetal y el aceite de coco.

  2. Una vez esté mezclado y hayas conseguido una consistencia suave, transferir a un bol y añadir el cacao y la proteína mezclando hasta que quede todo bien incorporado.

  3. Verter la mezcla en moldes para helados (mi molde es de 3 helados y me llegó para 2 veces) y dejar en el congelador al menos 3 horas.

  4. Derretir chocolate en el microondas o al baño maría.

  5. Desmoldar los helados y cubrirlos con chocolate.

  6. Dejar en el congelador almenos media hora más y ya están listos para consumir! (yo los dejo encima de papel de horno para que no manchen)

* Conservar en el congelador, sacarlos del congelador unos 10 minutos antes de consumirlos ya que sino estarán demasiado duros!
