LEMON CREAM PIE - NO BAKE

This year I decided to do a healthy version of a Lemon Cream Pie for my fiancΓ©βs birthday! And it turned out SO delicious!!! I have made two options for the base, check all the details for the recipe below!

Happy Birthday to you! Try this delicious and healthier Lemon Cream Pie Today! I only used few ingredients, easy to find and delicious to eat!
The macronutrients of this cake are pretty good. Take into account if you use a cookie base or you make your own. Usually if you make your own it will be better.
The filling is made with erythritol so there is no added sugar here. And combined with the fats of the mascarpone and cream, there are no sugar spikes!
Make sure you always check your sugar levels before and after eating and calculate your carb portions in order to know how much insulin youβll need.
I always recommend to eat dessert when your sugar levels are stable or about to drop, NEVER when your sugar levels are high since it will be much more difficult to control them after and it could also end up on too much insulin creating a low-sugar episode afterwardsβ¦

INGREDIENTS
Crust option A:
300gr graham crackers or cookie of choice
60gr grass-fed butter or coconut oil (melted)
Crust option B:
140gr of almond flour or you can mix 70gr almond flour with 70gr oat flour
50gr of coconut sugar or erythritol
60gr of grass-fed butter or coconut oil (melted)
Lemon Cream Filling:
12oz/340gr mascarpone
250ml whipping cream
60ml fresh lemon juice (from 1 big lemon approximately)
2 tablespoons lemon zest
pinch of pink Himalayan salt or salt of choice
50gr coconut sugar or erythritol, powdered (I used erythritol this time, to achieve that white color in the filling, otherwise it will be more brownish)
STEPS
Cover the base of a 6inch/15cm round mold (with removable base) with parchment paper.
Mix all the crust ingredients together.
Transfer dough to the mold. Using a measuring cup or your fingers, evenly press dough in bottom. Refrigerate.
In a large bowl, leave the mascarpone at room temperature. Set aside.
In another bowl, whip the cream until completely whipped and add the erythritol or coconut sugar, powdered. Mix until fully combined.
In another bowl, mix the lemon juice with the lemon zest and vanilla extract. Mix it with the whipped cream.
Add the mascarpone and mix until fully combined.
Pour into the mold on top of the cookie layer and make sure itβs evenly spread.
Keep in the fridge overnight or in the freezer for 2 hours if you need it sooner.
Let it thaw at room temperature 10 minutes before serving.
* In this no bake lemon cream pie recipe I have not used gelatin or agar agar to make the filling firm.
* Store in the fridge for 1 week or freeze it.

Delicioso pastel cremoso de limΓ³n. Hice este pastel para el cumpleaΓ±os de mi prometido ya que los postres de limΓ³n son sus favoritos.
Esta versiΓ³n es mΓ‘s saludable que la normal ya que no lleva azΓΊcares aΓ±adidos y estΓ‘ hecha con lΓ‘cteos de buena calidad. No he probado de hacerla sin lΓ‘cteos pero estoy segura que queda deliciosa tambiΓ©n, serΓa usando leche de coco y nata de coco en lugar de mascarpone y nata.
La base puede hacerse de galleta o si quieres que sea mΓ‘s saludable tienes la opciΓ³n de hacer la tuya propia en la receta que te dejo a continuaciΓ³n.

INGREDIENTES
ο»ΏBase galleta opciΓ³n A:
300gr galletas tipo MarΓa o Digestive
60gr mantequillas de vacas alimentadas con pasto
Base galleta opciΓ³n B:
140gr harina de almendra o puedes hacer una mezcla de 70gr de harina de avena con 70gr de harina de almendra
50gr azΓΊcar de coco o eritritol
60gr mantequillas de vacas alimentadas con pasto
Relleno de mascarpone y limΓ³n:
12oz/340gr mascarpone
250ml nata para montar
60ml zumo exprimido de 1 limΓ³n mas o menos
2 cucharadas de piel de limΓ³n rallada
pizca de sal rosa del Himalaya o la que quieras
50gr azΓΊcar de coco o eritritol, en polvo mejor (yo usΓ© eritritol para conseguir el color blanco del relleno sino se verΓ‘ mΓ‘s marrΓ³n)
PASOS
Cubrir la base de un molde redondo de 15cm con papel de molde (con base desmontable).
Mezclar todos los ingredientes de la base de galleta juntos y verter y esparcir en la base del molde, presionando con los dedos o con la base de un vaso. Dejar en la nevera.
En un bol, dejar el mascarpone a temperatura ambiente. Reservar.
En otro bol, montar la nata. Una vez montada, aΓ±adir el eritritol y mezclar.
En otro bol, mezclar el zumo de limΓ³n con la piel de limΓ³n y el extracto de vainilla. AΓ±adirlo a la nata montada y mezclar bien
Por ΓΊltimo aΓ±adir el mascarpone y mezclar hasta que quede todo bien integrado.
Verter el relleno por encima de la base de galleta, asegurando que quede bien esparcida y no queden huecos de aire.
Dejar en la nevera durante la noche o si lo necesitas antes, dejar en el congelador 2 horas.
Dejar que se ablande un poco, unos 10 minutos, antes de servirlo.
* Conservar en la nevera durante 1 semana o congelar a trozos.
