VEGAN ORANGE CHOCOLATE TRUFFLES

As lots of you may know I made this delicious Orange & Berry Chocolate Tart for the last day of 2021 and I had leftovers of the orange-chocolate filling! If you didn’t know, check the full recipe HERE, I’m sure you’re going to love how it turns out!!

So I though…what can I do with the leftovers? I saw it was hardening quite enough to stay firm and make balls…. so I decided to do some truffles!

This amazing healthy snack recipe not only is vegan but also refined sugar free, dairy-free and gluten-free. Enjoy!

DIABETIC DIET TIP

During the holidays and specially being diabetic, it is very important to watch your food intake, specially when it comes to sweets. With the amount of food constantly surrounding us during this time of the year, it is extremely easy to let yourself go. This is why these truffles can help you offset some of the craving for the traditional christmas treats leftovers which are full of refined sugars.

The combination of the ingredients used on this snacks, specially the healthy fats, will provide a slower digestion which will result in keeping you full for a longer time as well as preventing sugar spikes. Make sure to use sugar-free white chocolate and at least 85% cacao for the dark chocolate.

These healthy vegan truffles are a great snack or dessert any time of the day!

INGREDIENTS

Chocolate Orange Truffles:

I used leftovers of my Orange & Berry Chocolate Tart so I don’t know the exact ingredients but these are the quantities for half of the tart which should make 20-25 truffles.

  • 175gr firm tofu (at room temperature)

  • 100gr dark chocolate (I used at least 85% cacao)

  • 1/2 teaspoon orange extract

  • Optional: 1/2 tablespoon of stevia

Chocolate Cover:

  • 50gr dark chocolate (I use at least 85% cacao) or sugar-free chocolate

  • 50gr sugar-free white chocolate


STEPS

  1. If you haven’t done my Orange & Berry Chocolate Tart then you start from scratch so follow the next steps. If you already made my tart, then you start from step 4.

  2. Cut the firm tofu in some pieces and blend in a food processor together with the orange extract (and orange juice if you want to add it) until completely smooth. Transfer to a bowl.

  3. Melt the dark chocolate and pour into the blended tofu. Mix well until fully incorporated. If the tofu has not been at room temperature and it’s cold, when you add the melted chocolate the mixture will harden quickly. If that happens, just put the bowl in the microwave for 20 seconds and it will be smooth again.

  4. Leave the mixture/filling in a bowl for 10 minutes in the fridge.

  5. Once cooled, you should be able to shape balls with the filling. You should be able to make around 20-25 truffles.

  6. Once shaped, cover in dark chocolate and white chocolate and leave them in the fridge until you eat them!

* Store in the fridge for 1 week or freeze them.

Para los que ya saben, hice esta Tarta de Chocolate con Naranja y Frutos Rojos Vegana para fin de año 2020. Me sobró parte del relleno y entonces decidí hacer trufas ya que la consistencia era ideal!

Me salieron entre 20-25 trufas y me encanta tenerlas a mano como snack o postre.

¡No llevan gluten, ni lácteos ni azúcares refinados y además son vegana!

¡Empezando este 2021 con muchas ganas!


INGREDIENTES

Relleno de Chocolate y Naranja:

Yo usé el relleno que me sobró de mi receta de Tarta de Chocolate con Naranja y Frutos Rojos Vegana por eso no sé las cantidades exactas pero os dejo la mitad de las cantidades de la receta que os debería llegar para hacer entre 20-25 trufas.

  • 175gr tofu firme (a temperatura ambiente)

  • 100gr chocolate negro (al menos del 85%)

  • 1/2 cucharadita de extracto de naranja

  • Opcional: 1/2 cucharada de estevia en polvo

Cobertura de Chocolate:

  • 50gr chocolate negro (al menos del 85%) o sin azúcar añadido

  • 50gr chocolate blanco sin azúcar añadido


PASOS

  1. Si no has hecho mi Tarta de Chocolate con Naranja y Frutos Rojos Vegana entonces empiezas desde zero, sigue los pasos siguientes. Si la has hecho entonces ya tienes el relleno y empiezas desde el paso 4.

  2. Para el relleno. Cortar el tofu en algunas partes y triturar en una procesadora de alimentos o trituradora de mano junto con el extracto de naranja, el zumo de naranja si lo quieres usar) y la estevia. Pasar a un bol.

  3. Derretir el chocolate negro y mezclarlo con el tofu hasta que quede bien incorporado. Si el tofu no está a T ambiente y está frío, cuando añadas el chocolate derretido se va a endurecer de nuevo. Si eso pasa, pon el bol en el microondas durante 20 segundos y volverá a tener textura suave.

  4. Dejar la masa de tofu y chocolate en un bol en la nevera unos 10 minutos para que endurezca.

  5. Una vez endurecida la masa, puedes hacer bolitas, deberían salir entre 20 y 25 o incluso más dependiendo de lo grandes que las hagas.

  6. Una vez hechas las bolitas, cúbrelas con chocolate negro y chocolate blanco y déjalas en la nevera hasta que las consumas.

* Conservar en la nevera durante 1 semana o en el congelador.
