Happy Chocolate Parfait Day!

These delicious and healthy Chocolate Parfait will be a great choice anytime as snack or dessert. How cute are parfaits?? I love how you can see all the layers!

These healthy parfaits are gluten free, refined sugar free and can be dairy free, see all the options below!

DIABETIC DIET TIPο»Ώ

Great snack/dessert when your sugar levels are stable or about to drop. Take into account the fruit you add since the sugar content can vary. Choose bananas if you need more sugar, choose berries if you don’t. Any fruit works with chocolate!

These healthy snack is packed with nutrients and will be a great presentation if you bring dessert for dinner!

INGREDIENTS

For the cookie-brownie layer:

For the chocolate mousse layer:

Option 1. Make this healthy avocado-chocolate mousse.

Option 2:

  • 250gr cream cheese or greek yogurt or coconut yogurt for a dairy free version

  • 20gr cacao powder

  • 2 tablespoons erythritol or coconut sugar

  • 1 teaspoon vanilla extract

  • Optional: 1 scoop chocolate protein powder

  • Use any fruit of choice as a topping, I chose bananas!


STEPS

  1. Make the healthy brownie and cut into pieces or make the healthy OREO cookies. Once cooled, cut the brownie into pieces or break the cookies and pour 1/2 on the base of 3 glasses.

  2. To make the chocolate mousse, either choose to make this healthy avocado-chocolate mousse or mix the ingredients listed above together except the fruit.

  3. Add the mousse on top of the brownie layer and then add again the brownie layer on top of the mousse (see pictures above as a reference).

  4. When you get to the top of the glass, finish with your favorite fruit and the leftover mousse and it will be ready to eat!

* Store in the fridge for 1 week.

Receta de snack fΓ‘cil y saludable, sin horno!

Me encantan este tipo de postres/snack en vasos de cristal con varias capas de diferentes gustos que hacen una combinaciΓ³n ideal de sabores!

Estos parfait de chocolate, no llevan gluten ni azΓΊcares refinados y pueden ser sin lΓ‘cteos y veganos si usas un yogur sin lΓ‘cteos/vegano.

INGREDIENTES

Para la capa de brownie-galleta:

Para la capa de mousse de chocolate:

OpciΓ³n 1. Hacer este mousse de chocolate y aguacate saludable

OpciΓ³n 2:

  • 250gr queso crema o yogur griego o yogur de coco para versiΓ³n sin lΓ‘cteos

  • 20gr cacao en polvo

  • 2 cucharadas de eritritol o azΓΊcar de coco

  • 1 cucharadita de extracto de vainilla

  • Opcional: 1 scoop de proteΓ­na de chocolate en polvo

  • Usar la fruta que quieras como topping, yo he puesto plΓ‘tanos!


PASOS

  1. Hacer este brownie saludable y desmenuzarlo o hacer estas OREO saludables. Una vez se hayan enfriado, desmenuzar el brownie o romper en trozos las galletas y verter una parte en la base de 3 vasos de cristal.

  2. Para hacer el mousse de chocolate, escoger hacer este mousse de chocolate y aguacate o mezclar todos los ingredientes de la lista excepto la fruta.

  3. AΓ±adir una capa de mousse por encima de la capa de brownie o galleta y volver a verter el resto de brownie galleta encima de la capa de mouse (ver fotos de arriba como referencia).

  4. Una vez hayas llenado el baso, aΓ±ade tu fruta favorita como topping y el resto de mousse que te haya sobrado y estarΓ‘ listo!

* Conservar en la nevera durante 1 semana.
