- 3 ingredient - HEALTHY PEACH ICE CREAM

Some days ago we went for an ice cream and I was in the mood for PEACH ICE CREAM! I usually choose Pistachio Ice Cream but in this place they didnβt have any so I chose the Peach one and it was so insanely delicious!!! And that is why I decided to try make one at home.
And the result was great! Only 3 ingredients and youβre set! Besides it is much more healthier, at least for sure it has 5 times less sugar, because this recipe has no added sugar at all! Only the natural sugars from the peach and a touch of stevia or sweetener of choice.

This healthy recipe is a great idea for diabetics! Who said diabetics canβt eat ice cream?? Specially in summer time!
So this delicious ice cream recipe does not have any added sugars, only the ones that come from the peaches that together with the full fats of the whipping cream and/or yogurt makes no sugar spikes on your bloodstream!
Remember to always check your sugar levels before eating any type of food and make sure youβre stable around 80-120 mg/dL.
INGREDIENTS
320gr of chopped peach (2 big peaches aprox.)
400ml heavy whipping cream or whole milk/full fat yogurt (I havenβt tried with yogurt but Iβm pretty sure it will work also, make sure is full fat, you can also use 200gr yogurt and 200ml cream)
1/4 cup erythritol powder or sweetener of choice
STEPS
Peel and cut the peaches and blend them.
Add the whipping cream and the sweetener and blend again until fully smooth and creamy.
You can add chopped peaches inside or any other ingredient you want.
Pour the ice cream into a square or rectangle mold and leave in the fridge for 1 hour.
Transfer to freezer and leave at least 2 hours or overnight.
* Store in the freezer.

El otro dΓa fuimos a una heladerΓa, y yo siempre me pido helado de pistacho pero no tenΓan asΓ que me pedΓ de melocotΓ³n y de galleta. El de melocotΓ³n estaba delicioso!! AsΓ que me animΓ© a probar de hacer una versiΓ³n saludable sin azΓΊcares aΓ±adidos, ni gluten. Β‘Tan solo 3 ingredientes!
Al no llevar azΓΊcares aΓ±adidos, sΓ³lo los azΓΊcares naturalmente presentes en los melocotones, la combinaciΓ³n con la nata o yogur que tienen grasas saludables ayudarΓ‘ a no tener picos de azΓΊcar en sangre :)
ΒΏCuΓ‘l es vuestro sabor favorito?
INGREDIENTES
320gr melocotΓ³n troceado (unos 2 melocotones grandes aprox.)
400ml nata para montar o yogur entero (no he probado con yogur, pero seguro que queda igual de cremoso, siempre usa yogur entero, no desnatado! TambiΓ©n puedes usar 200gr yogur y 200ml nata)
1/4 taza de eritritol o azΓΊcar de coco o endulzante que prefieras
PASOSPelar y cortar los melocotones y triturarlos.
AΓ±adir la nata y el endulzante y triturar todo junto hasta que quede suave y cremoso.
Puedes aΓ±adir trozos de melocotΓ³n extra o el ingrediente que quieras.
Verter el helado en un molde rectangular o cuadrado y dejar en la nevera 1 hora.
Transferir al congelador y dejar 2 horas o hasta el dΓa siguiente.
* Conservar en el congelador.
